PERFORMANCE

Exchange Pump
The ingredients are mixed and pasteurized inside the cup exchange pump, which is located on the bottom of the tank. This exclusive patented Carpigiani technology guarantees:

High micronization: the millimetric cup-stirrer coupling and the different mixing speeds reduce the fat globules to particularly fine dimensions, from 2 to 5 microns, to obtain creamier and more stable ice creams.

Superior efficiency allows you to work even with minimum charges without the risk of burning the mixture. Furthermore, the original dry bain-marie prevents product encrustations.

Raw Milk: The monolithic exchange pump, the new design of the tap and the specific extractable conveyor* guarantee absolute hygiene of the blends, even with the use of raw milk. (*for all models. Also available as a spare)

Standard extractable conveyor, with a square shape (lower diameter for Pastomaster 60 and larger diameter for Pastomaster 120) which allows you to mix particularly dense and viscous ingredients, and produce mixtures rich in solids. Also ideal for the production of sauces and cheeses.

Cycle times: The heat exchange per liter of mix, heating to 85°C and cooling to 4°C, is extremely rapid: less than 2 minutes on the 60 HE model and less than 1 minute on the 120 HE. With this technology, energy consumption and pasteurization times are directly proportional to the quantity of mix to be produced.

High Power* Optional function that allows you to save up to 20%** on heating times without increasing total energy consumption. (* available only for Pastomaster 60 HE and Pastomaster 60 HE P, can only be ordered at the time of purchase. ** compared to the standard version)

COMFORT'

New solutions for maximum comfort of use

Lid and exchange pump: Lid with a new design, easy to assemble and disassemble. Thanks to the exchange pump, by opening the lid it is possible to introduce the ingredients (while the mixture is stirring) working in complete safety.

Mix transport: Optional kit for hygienically transferring the mix.

Bucket shelf: Optional in steel, it can be disassembled and washed in an object washer.

Pipe collector: Thanks to the bracket located on the back of the machine, it is possible to house the water connection pipes so that they remain raised from the ground, thus facilitating movement without hindrance and floor cleaning.

Water Filling* New optional function to dispense the precise quantity of water required in recipes or cleaning, saving time and avoiding dosing errors. (*for all models. Can only be ordered upon purchase)

All the updated contents such as the catalogue, instruction manual and Carpi Care kit can be downloaded via the QR Code on the front of the machine.

Reduction of water consumption

Carpigiani's HIGH EFFICIENCY technology, equipped with high-efficiency electric motors and high-performance condensers, determines the maximum efficiency of the mix pasteurization cycles. Pastomaster HE ensures large savings on water consumption, up to 30% compared to RTX pasteurisers.

More operational safety and more control in production

Once the 50°C is exceeded, to avoid splashes of boiling mixture, the stirring stops by lifting the lid.

Black-out and water interruption: After a lack of electricity or water, if the temperature-time parameters guarantee that the mixture has not undergone any alteration, the pasteurizer resumes the program in progress. Otherwise it automatically starts a new complete pasteurization cycle warning the operator with a message on the display.

With TEOREMA it is possible to monitor the machine via internet via PC, tablet and smartphone. Assistance is facilitated thanks to the possibility of checks and diagnosis directly remotely.

Ergonomic design: Accident prevention has been increased, with even more rounded and connected corners.

During processing, when temperatures exceed 50°C, the display turns red to warn the operator that there are products heating up inside the machine. This visual signal helps prevent mishandling with hot products.

HYGIENE

Easy cleaning, guaranteed hygiene

Temperature-controlled tap: The mixture circulates continuously inside the tap, ensuring the correct operating temperature of the same both during pasteurization and in the conservation/maturation phase.

Always clean tap: The new geometry allows you to wash the mixture outlet hole at any time, during all the processing phases.

Total cleaning: The new tap, the removable conveyor and the monolithic cup allow easy and total cleaning of the machine.

The new wheels with stainless steel structure can withstand frequent washing even with the most aggressive detergents.

The new stainless steel shower, housed on the front of the machine, extends up to the tap to facilitate cleaning. It also has a hose lock function which makes it easier to handle during use.

Even cleaning the plates is quick, because with the Scotch-Brite treatment, the stainless steel is stain-resistant and does not retain grease residues.
